How It All Started
WOODSTER was born from a return to the roots. That of Joelle Driesens, driven by the desire to reconnect with her family heritage around coffee. Granddaughter of a coffee roaster, she grew up surrounded by the aromas of Maison Javanaise, among jute sacks and coffee beans, nurtured by artisanal expertise.
After more than a year of research, experimentation, and reflection, WOODSTER was born in October 2022. The choice of specialty coffee and artisanal wood-fired roasting naturally goes without saying: an authentic method, respectful of the product and meaningful, both for taste and for the environment.
With WOODSTER, Joelle invites everyone to rediscover coffee differently — more slowly, more consciously. Each cup embodies strong commitments: a demanding selection, traceability from bean to cup, artisanal roasting, and a thoughtful approach to transform each coffee into a true experience.

Opening of Our Workshop
After nearly two years spent roasting and learning alongside our partners in France, WOODSTER opens the doors of its workshop in Mont-Saint-Guibert, in the heart of the Sur le Champ farm, a lively place dedicated to more sustainable food.
Much more than just a production space, this workshop aims to be a place of meeting, exchange, and discovery around coffee. We welcome visitors there two days a week, to share our know-how and let them experience the WOODSTER experience up close with roasting.
Integrated into this local ecosystem, WOODSTER develops collaborations with committed local actors: roasting waste is repurposed with farmers, while the micro-sawmill La Source provides wood residues reused for roasting. Through its workshop, WOODSTER fully engages in a local and sustainable circularity approach.
DESIRE TO CONSUMEDIFFERENTLY : A Reflection from Tree to Cup
WOODSTER roasts over a wood fire for what it brings to the coffee but also because it aligns with our overall approach. WOODSTER offers through its roasting a reflection to reduce its ecological footprint both at the source in producing countries and here at home by taking action at every stage of the coffee process: from tree to cup!
